  1. Sift

    Add one teaspoon of matcha to a small, dry bowl. Sifting first helps break up clumps and makes whisking easier.

  2. Whisk

    Add a splash of warm water. Whisk briskly in a zigzag until the surface looks light and frothy. Take a breath while the kettle cools.

  3. Make it yours

    Top up with water or milk. For an iced version, pour over a generous handful of ice. Add a little sweetness if you like.

Do I need a bamboo whisk?

A bamboo whisk makes a lovely foam, but a handheld milk frother or a jar with a tight lid works for a first experiment. Start with what you have.

How should I store matcha?

Keep your tin closed, cool, and away from sunlight. Use a dry spoon, and make opening the tin part of the ritual.
